Another of Firehun’s special process coffees, this one is a variant on the honey process.
The coffee has a strong aroma of fermentation, like candied pineapple and amaretto.
It’s slightly boozy, like a dark rum with macerated fruits, and the finish is marzipan.
Here’s his recipe for producing Hydro Honey:
-Cherries are first selected to have higher than 20 brix
-cherries are layed out on drying beds for 24 hours
-cherries are pulped and put into tanks, closed top, for 24 hours
-water is added, removed after 8 hours
-shade dried until 12% moisture is reached
This year Firehun’s Hydro Honey was made with cherries coming from the Korosuma site, below the Danche processing site.
