sweet, bright, candy/fruity, with a hint of fermentation, this coffee comes from Heleanna Georgalis’ property deep in the Sheka jungle. Close to Wush-Wush, not far from Gesha village (where the original Geisha coffees were born), here the coffee grows in shade, at high altitude, and it rains often. Monkeys are everywhere and it’s a lot of work to trudge through the jungle to pick ripe coffee cherries! For “honey” process, the cherries are sorted, passed through the depulping machine, and spread out on the raised drying beds in the drying barn, with the mucilage still covering the coffee beans. The drying mucilage lends a bit of sweetness to the coffee.
